Brochette is a versatile and popular French kebab that can be made with various meats, seafood, or vegetables. The following recipe offers a classic take on this delightful dish, perfect for grilling and enjoying with a variety of sides.

Brochette: French-Style Grilled Skewers

For the Marinade:

1/4 cup olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

For the Brochettes:

1 lb beef sirloin or pork tenderloin, cut into 1-inch cubes (or chicken breast, shrimp, or a mix)
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into wedges
1 zucchini, sliced into rounds
Cherry tomatoes
Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes to prevent burning)
