Grilled Chicken Adobo

For the Marinade:
• Chicken Thighs or Drumsticks: 4-6, bone-in, skin-on
• Soy Sauce: 1/2 cup
• White Vinegar: 1/4 cup
• Garlic: 6 cloves, minced
• Bay Leaves: 3
• Whole Black Peppercorns: 1 teaspoon
• Brown Sugar: 1 tablespoon
• Water: 1/4 cup
• Lime Juice: 2 tablespoons (about 1 lime)
• Olive Oil: 2 tablespoons
For Serving:
• Steamed Rice: 4 servings
• Fresh Cucumber Slices: For garnish
