Spiedini: Italian Grilled Meat Skewers

For the Marinade:

1 lb mixed meats (pork tenderloin, Italian sausage, chicken breast, or game birds), cut into 1-inch cubes
1/4 cup olive oil
3 cloves garlic, minced
2 tablespoons fresh lemon juice
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)

For the Skewers:

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes to prevent burning)
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into wedges
Cherry tomatoes
Fresh bay leaves (optional)
