Harira is a traditional Moroccan soup that's both hearty and delicious. It's packed with lentils, chickpeas, tomatoes, and a blend of warming spices, making it perfect for any time of the year.

Veg Moroccan Lentil and Chickpea Soup (Harira)

For the Soup:
• 2 tbsp olive oil
• 1 large onion, finely chopped
• 3 cloves garlic, minced
• 2 celery stalks, finely chopped
• 2 large carrots, peeled and diced
• 1 can (15 oz) chickpeas, drained and rinsed
• 1 cup green or brown lentils, rinsed
• 1 can (15 oz) crushed tomatoes
• 6 cups vegetable broth
• 1 tsp ground cumin
• 1 tsp ground cinnamon
• 1 tsp ground turmeric
• 1 tsp ground ginger
• 1/2 tsp smoked paprika
• Salt and pepper to taste
• 1/4 cup fresh parsley, chopped
• 1/4 cup fresh cilantro, chopped
• Juice of 1 lemon
For Garnish:
• Fresh parsley and cilantro, chopped
• Lemon wedges
