8 oz rotini pasta (or any pasta of your choice)
Vegetables:
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn kernels, rinsed and drained
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1 avocado, diced
1/4 cup fresh cilantro, chopped
Dressing:
1/4 cup olive oil
2 tbsp lime juice (freshly squeezed)
1 tsp ground cumin
1 tsp smoked paprika
1 clove garlic, minced
Salt and pepper to taste
