Suya is a popular West African street food, particularly in Nigeria. These flavorful kebabs are made with beef, chicken, or other meats, and are seasoned with a distinctive spice blend that includes ground peanuts and hot peppers.

Suya: West African Grilled Meat Skewers

For the Suya Spice Mix:

1 cup roasted peanuts, ground into a coarse powder
1 tablespoon ground ginger
1 tablespoon paprika
1 tablespoon cayenne pepper (adjust to taste)
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika (optional)

For the Skewers:

1.5 lbs beef sirloin or chicken breast, cut into thin strips
2 tablespoons vegetable oil
Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes to prevent burning)
