2 lbs Yukon Gold potatoes, peeled and diced
Vegetables and Add-ins:
1 cup peas (fresh or frozen, thawed)
1/2 cup red bell pepper, finely chopped
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
2 tbsp fresh cilantro, chopped
1/2 cup vegan mayonnaise
1/4 cup coconut milk (full-fat for a creamier texture)
2 tbsp apple cider vinegar
2 tbsp curry powder
1 tbsp Dijon mustard
1 tbsp maple syrup or agave nectar
1 clove garlic, minced
Salt and pepper to taste
