Veg Indian Creamy Coconut Lentil Curry

Coconut Milk: 1 can (14 oz) of full-fat coconut milk for creaminess
Tomatoes: 2 medium tomatoes, diced, or 1 can (14 oz) of diced tomatoes
Onion: 1 large onion, finely chopped
Garlic: 3 cloves, minced
Ginger: 1-inch piece, minced
Spinach: 2 cups fresh spinach leaves
Vegetable Broth or Water: 2 cups
Spices:

1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric powder
1/2 teaspoon ground cinnamon
