Tofu: 1 block (14 oz) firm or extra-firm tofu, drained and crumbled
Olive Oil: 1 tablespoon
Onion: 1 small onion, finely chopped
Garlic: 2 cloves, minced
Bell Pepper: 1 small bell pepper, diced (any color)
Turmeric: 1/2 teaspoon (for color and flavor)
Nutritional Yeast: 2 tablespoons (optional, for a cheesy flavor)
Salt and Pepper: To taste
Fresh Herbs: Chopped parsley or chives for garnish

Optional Add-ins:

Spinach: 1 cup fresh spinach leaves, roughly chopped
