Veg Vegetable Biryani with Chickpeas

◦ 1 1/2 cups Basmati rice
◦ 3 cups water
◦ 1 bay leaf
◦ 2-3 green cardamom pods
◦ 2-3 cloves
◦ 1 small cinnamon stick
◦ 1/2 teaspoon salt
• For the Biryani:
◦ 2 tablespoons vegetable oil or ghee
◦ 1 large onion, thinly sliced
◦ 1 tablespoon ginger-garlic paste
◦ 1 large tomato, chopped
◦ 1 cup mixed vegetables (carrots, peas, green beans, and potatoes), diced
◦ 1 cup cooked or canned chickpeas, drained and rinsed
◦ 1/2 cup plain yogurt or vegan yogurt
◦ 1/4 cup fresh mint leaves, chopped
◦ 1/4 cup fresh cilantro leaves, chopped
◦ 1 teaspoon ground turmeric
◦ 1 teaspoon ground cumin
◦ 1 teaspoon ground coriander
◦ 1/2 teaspoon red chili powder (adjust to taste)
◦ 1 teaspoon garam masala
◦ Salt to taste
◦ Juice of 1 lemon
• For Garnish:
◦ Fried onions
◦ Fresh cilantro leaves
◦ Saffron threads soaked in warm milk (optional)
