1 cup quinoa (rinsed)
2 cups water or vegetable broth

Black Beans
1 can black beans (15 oz), rinsed and drained

Sweet Potatoes
2 medium sweet potatoes, peeled and cubed
1 tablespoon olive oil
Salt and pepper to taste

1 ripe avocado, sliced

Red Onions and Bell Peppers
1 large red onion, thinly sliced
2 bell peppers (any color), thinly sliced

Aji Amarillo Sauce
4 tablespoons Aji Amarillo paste
1/2 cup vegan mayonnaise or soaked cashews (if using cashews, blend until smooth with water)
2 cloves garlic, minced
Juice of 1 lime
Salt to taste

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges for serving

4 large flour tortillas (use gluten-free if needed)
