Vegetable Kabobs

Vegetables:

1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 zucchini, sliced into 1/2-inch rounds
1 yellow squash, sliced into 1/2-inch rounds
1 red onion, cut into wedges
8 oz button mushrooms, stems removed
1 cup cherry tomatoes

Marinade:

1/4 cup olive oil
3 tbsp soy sauce or tamari (for a gluten-free option)
2 tbsp balsamic vinegar
1 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp smoked paprika
Salt and pepper to taste
