• 4 large portobello mushrooms, stems removed and cleaned
For the Burgers:
• 4 burger buns (use gluten-free if needed)
• 1 avocado, sliced
• 1 small cucumber, thinly sliced
• 1 carrot, julienned or grated
• 1/4 cup fresh cilantro leaves
• 1/4 cup vegan mayo
• 1 tablespoon sriracha (for spicy mayo)
• Sesame seeds (for garnish)
• Fresh lime wedges (optional)

Instructions:

1. Prepare the Marinade:
◦ In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, maple syrup, minced ginger, minced garlic, and sriracha (if using).
2. Marinate the Portobello Mushrooms:
◦ Place the portobello mushrooms in a shallow dish or resealable plastic bag.
◦ Pour the marinade over the mushrooms, making sure they are well coated.
◦ Marinate for at least 30 minutes, turning occasionally to ensure even marination.
3. Grill the Mushrooms:
