Veg Instant Pot Mujadara

Instant Pot Mujadara is a modern take on the traditional Middle Eastern dish that combines lentils, rice, and caramelized onions. Utilizing the convenience of an Instant Pot, this recipe drastically reduces the cooking time while still delivering the deep, comforting flavors that Mujadara is known for.

 Veg Instant Pot Mujadara

Ingredients:

• 1 cup brown or green lentils, rinsed
• 1 cup long-grain rice (basmati or jasmine), rinsed
• 2 tablespoons olive oil
• 1 large onion, finely chopped
• 3 cloves garlic, minced
• 2 teaspoons ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground allspice
• 1/2 teaspoon ground turmeric
• 4 cups vegetable broth
• Salt and pepper to taste
For the Caramelized Shallots:
• 3 large shallots, thinly sliced
• 2 tablespoons olive oil
• Salt to taste
For Serving:
• Fresh veggies (such as cucumber, tomato, radishes, and parsley)
• 1/4 cup pine nuts, toasted
• Vegan yogurt or regular yogurt (optional)
• Lemon wedges

Instructions:

1. Prepare the Mujadara in the Instant Pot:
◦ Set the Instant Pot to the sauté function. Add the olive oil and chopped onion. Sauté for 5-7 minutes until the onion is soft and beginning to brown.
◦ Add the minced garlic, ground cumin, ground coriander, ground cinnamon, ground allspice, and ground turmeric. Sauté for another 1-2 minutes until fragrant.
◦ Add the rinsed lentils and rice, stirring to coat with the spices and onion mixture.
◦ Pour in the vegetable broth and season with salt and pepper.
◦ Secure the lid on the Instant Pot, ensuring the valve is set to the sealing position. Select the manual or pressure cook function and set the timer for 15 minutes.
◦ Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then carefully quick-release any remaining pressure.
2. Prepare the Caramelized Shallots:
◦ While the mujadara is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
◦ Add the sliced shallots and a pinch of salt. Cook, stirring frequently, for 15-20 minutes until the shallots are deeply caramelized. Reduce the heat if needed to prevent burning.
3. Serve:
◦ Once the Instant Pot has released all pressure, open the lid and fluff the mujadara with a fork.
◦ Serve the mujadara in bowls, topped with caramelized shallots, fresh veggies, toasted pine nuts, and a dollop of vegan or regular yogurt if desired.
◦ Garnish with fresh parsley and serve with lemon wedges on the side.
