The Australian Sausage Sizzle is a beloved and iconic Australian culinary tradition, often enjoyed at community events, fundraisers, and casual gatherings. This simple yet delicious dish consists of grilled sausages served on a slice of bread or a bread roll, accompanied by a variety of condiments and sometimes grilled onions.

Australian Sausage Sizzle


For the Sausages:
• Beef or Pork Sausages: 8-10
• Olive Oil: 2 tablespoons (for grilling)
For the Caramelized Onions:
• Onions: 3 large, thinly sliced
• Butter: 2 tablespoons
• Olive Oil: 1 tablespoon
• Brown Sugar: 1 tablespoon
• Balsamic Vinegar: 1 tablespoon
• Salt: To taste
• Black Pepper: To taste
For Serving:
• White Bread Slices: 8-10 (or hot dog buns)
• Tomato Sauce (Ketchup): As needed
• Mustard: As needed
• BBQ Sauce: As needed


1. Prepare the Caramelized Onions:
◦ In a large skillet, heat the butter and olive oil over medium heat.
◦ Add the thinly sliced onions and cook, stirring occasionally, until they start to soften (about 5 minutes).
◦ Sprinkle the brown sugar over the onions and continue to cook, stirring frequently, until the onions are deeply caramelized (about 15-20 minutes).
◦ Add the balsamic vinegar, salt, and black pepper, and cook for an additional 2-3 minutes until well combined. Set aside.
2. Grill the Sausages:
◦ Preheat your grill to medium-high heat.
◦ Lightly brush the sausages with olive oil to prevent sticking.
◦ Place the sausages on the grill and cook, turning occasionally, until they are browned and cooked through (about 10-15 minutes).
3. Assemble the Sausage Sizzle:
◦ If using white bread slices, place one grilled sausage diagonally across each slice of bread. If using hot dog buns, place the sausage in the bun.
◦ Top with a generous portion of caramelized onions.
◦ Drizzle with tomato sauce, mustard, and/or BBQ sauce as desired.
4. Serve:
◦ Serve immediately, preferably with a cold beverage and some friends for an authentic Aussie experience.


Serving Suggestions:
• Serve with a side of potato salad or coleslaw for a complete meal.
• For an extra touch, add some grilled peppers or sauerkraut as additional toppings.
