Chicken, Avocado, and Mango Salad


For the Chicken:
• Chicken Breasts: 2 boneless, skinless
• Olive Oil: 2 tablespoons
• Garlic Powder: 1 teaspoon
• Paprika: 1 teaspoon
• Salt: 1/2 teaspoon
• Black Pepper: 1/2 teaspoon
• Lime Juice: 1 tablespoon
For the Salad:
• Mixed Greens: 6 cups
• Avocado: 2, sliced
• Mango: 1, diced
• Cherry Tomatoes: 1 cup, halved
• Red Onion: 1/4, thinly sliced
• Cucumber: 1, sliced
• Fresh Cilantro: 1/4 cup, chopped
For the Dressing:
• Olive Oil: 1/4 cup
• Lime Juice: 2 tablespoons
• Honey: 1 tablespoon
• Dijon Mustard: 1 teaspoon
• Salt and Pepper: To taste


1. Prepare the Chicken:
◦ Preheat your grill to medium-high heat.
◦ In a small bowl, mix together the olive oil, garlic powder, paprika, salt, black pepper, and lime juice.
◦ Rub the mixture over the chicken breasts, ensuring they are well coated.
◦ Grill the chicken for about 6-8 minutes per side, or until fully cooked. The internal temperature should reach 165°F (74°C).
◦ Remove from the grill and let rest for a few minutes before slicing.

◦ Toss gently to combine.
3. Prepare the Dressing:
◦ In a small bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper until well combined.
4. Assemble the Salad:
