Chickpea ‘Chicken’ Salad is a delicious and nutritious vegan alternative to traditional chicken salad. It's perfect for sandwiches, wraps, or as a topping for salads. This recipe combines the texture of mashed chickpeas with flavorful ingredients to create a satisfying and versatile dish.

Chickpea ‘Chicken’ Salad

Chickpeas: 1 can (15 oz) chickpeas, drained and rinsed
Vegan Mayonnaise: 1/4 cup
Celery: 2 stalks, finely chopped
Red Onion: 1/4 cup, finely chopped
Dill Pickles: 1/4 cup, finely chopped
Dijon Mustard: 1 tablespoon
Lemon Juice: 1 tablespoon
Nutritional Yeast: 1 tablespoon (optional, for a cheesy flavor)
Dried Dill: 1 teaspoon
Garlic Powder: 1/2 teaspoon
Salt and Pepper: To taste
Fresh Parsley or Dill: Chopped, for garnish

Mash the Chickpeas:
Place the drained and rinsed chickpeas in a large bowl. Use a fork or potato masher to mash the chickpeas until they are mostly broken down, leaving some chunks for texture.

Mix the Ingredients:
Add the vegan mayonnaise, chopped celery, red onion, dill pickles, Dijon mustard, lemon juice, nutritional yeast (if using), dried dill, garlic powder, salt, and pepper to the mashed chickpeas. Stir until all the ingredients are well combined.

Adjust Seasoning:
Taste the chickpea salad and adjust the seasoning as needed, adding more salt, pepper, or lemon juice to your liking.

Chill (Optional):
For the best flavor, cover the bowl and refrigerate the chickpea salad for at least 30 minutes before serving. This allows the flavors to meld together.

Garnish with fresh parsley or dill. Serve the chickpea ‘chicken’ salad on sandwich bread, in wraps, on a bed of greens, or with crackers.
