Grilled Chicken Adobo is a delicious and aromatic Filipino dish that puts a twist on the traditional chicken adobo by grilling the marinated chicken to add a smoky flavor and a crispy exterior. Adobo is a cornerstone of Filipino cuisine, known for its savory, tangy, and slightly sweet taste.

Grilled Chicken Adobo


For the Marinade:
• Chicken Thighs or Drumsticks: 4-6, bone-in, skin-on
• Soy Sauce: 1/2 cup
• White Vinegar: 1/4 cup
• Garlic: 6 cloves, minced
• Bay Leaves: 3
• Whole Black Peppercorns: 1 teaspoon
• Brown Sugar: 1 tablespoon
• Water: 1/4 cup
• Lime Juice: 2 tablespoons (about 1 lime)
• Olive Oil: 2 tablespoons
For Serving:
• Steamed Rice: 4 servings
• Fresh Cucumber Slices: For garnish
• Fresh Cilantro: For garnish
• Lime Wedges: For garnish


1. Prepare the Marinade:
◦ In a large mixing bowl, combine the soy sauce, white vinegar, minced garlic, bay leaves, whole black peppercorns, brown sugar, water, lime juice, and olive oil.
◦ Mix well until all ingredients are thoroughly combined.
2. Marinate the Chicken:
◦ Add the chicken thighs or drumsticks to the marinade, ensuring each piece is well coated.
◦ Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.
3. Prepare the Grill:
◦ Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and have an even heat distribution.
4. Grill the Chicken:
◦ Remove the chicken from the marinade and let any excess drip off.
◦ Place the chicken on the preheated grill.
◦ Grill for about 6-8 minutes per side, or until the chicken is fully cooked and has a nice char. The internal temperature should reach 165°F (74°C).
◦ Remove from the grill and let rest for a few minutes.
5. Serve:
◦ Serve the grilled chicken adobo with steamed rice.
◦ Garnish with fresh cucumber slices, cilantro, and lime wedges.

• Pair the Grilled Chicken Adobo with a side of pickled vegetables for a tangy contrast.
• For an extra touch, drizzle some of the leftover marinade (boiled and reduced) over the chicken before serving.
