Grilled Greek Chicken

For the Chicken Marinade:
• Chicken Breasts or Thighs: 4 boneless, skinless
• Olive Oil: 1/4 cup
• Lemon Juice: 1/4 cup (about 2 lemons)
• Red Wine Vinegar: 2 tablespoons
• Garlic: 4 cloves, minced
• Dried Oregano: 2 teaspoons
• Dried Thyme: 1 teaspoon
• Dried Rosemary: 1 teaspoon
• Dried Basil: 1 teaspoon
• Salt: 1 teaspoon
• Black Pepper: 1/2 teaspoon
For the Tzatziki Sauce:
• Greek Yogurt: 1 cup
• Cucumber: 1 small, grated and excess water squeezed out
• Garlic: 2 cloves, minced
• Lemon Juice: 1 tablespoon
• Dill: 1 tablespoon, chopped
• Olive Oil: 1 tablespoon
• Salt: To taste

1. Prepare the Chicken Marinade:
◦ In a large mixing bowl, combine the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, dried thyme, dried rosemary, dried basil, salt, and black pepper.
◦ Mix well until all ingredients are thoroughly combined.
2. Marinate the Chicken:
◦ Add the chicken breasts or thighs to the marinade, ensuring each piece is well coated.
◦ Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.
3. Prepare the Tzatziki Sauce:
◦ In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, olive oil, and salt.
◦ Mix well and refrigerate until ready to serve.
4. Prepare the Grill:
◦ Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and have an even heat distribution.
5. Grill the Chicken:
◦ Remove the chicken from the marinade and let any excess drip off.
◦ Place the chicken on the preheated grill.
◦ Grill for about 6-8 minutes per side, or until the chicken is fully cooked and has a nice char. The internal temperature should reach 165°F (74°C).
◦ Remove from the grill and let rest for a few minutes.
6. Serve:
◦ Slice the grilled chicken and serve with a dollop of tzatziki sauce.
◦ Accompany with traditional Greek sides such as a Greek salad, pita bread, and roasted vegetables.

Serving Suggestions:
• Pair the grilled chicken with a Greek salad made of tomatoes, cucumbers, red onions, Kalamata olives, and feta cheese, dressed with olive oil and red wine vinegar.
• Serve with warm pita bread and a side of roasted vegetables like bell peppers, zucchini, and eggplant.
