Spiedini are Italian kebabs that can be made with a variety of meats, including pork, sausage, chicken, and even exotic game birds. These skewers are typically marinated and grilled, offering a flavorful and versatile dish that is perfect for gatherings.

Spiedini: Italian Grilled Meat Skewers


For the Marinade:

1 lb mixed meats (pork tenderloin, Italian sausage, chicken breast, or game birds), cut into 1-inch cubes
1/4 cup olive oil
3 cloves garlic, minced
2 tablespoons fresh lemon juice
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)

For the Skewers:

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes to prevent burning)
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into wedges
Cherry tomatoes
Fresh bay leaves (optional)


Lemon wedges
Fresh herbs (parsley or basil)
Crusty Italian bread
Extra virgin olive oil for drizzling


Prepare the Marinade:
In a large bowl, combine the olive oil, minced garlic, lemon juice, chopped rosemary, thyme leaves, chopped parsley, salt, black pepper, and red pepper flakes (if using). Mix well.

Marinate the Meat:
Add the mixed meat cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.

Skewer the Ingredients:
Thread the marinated meat onto the soaked bamboo skewers, alternating with pieces of red bell pepper, yellow bell pepper, red onion wedges, and cherry tomatoes. If desired, add a fresh bay leaf between the pieces of meat and vegetables for extra flavor.

Preheat the Grill:
Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and have a white ash coating.

Grill the Spiedini:
Brush the grill grates with a little olive oil to prevent sticking. Place the skewers on the grill.
Grill for about 10-12 minutes, turning occasionally, until the meat is cooked through and has a nice char.

Remove the spiedini from the grill and let them rest for a few minutes.
Serve the spiedini with lemon wedges, fresh herbs, and crusty Italian bread. Drizzle with extra virgin olive oil for added flavor.
