Veg Black Bean Burger SouthWest Style

Black Beans: 1 can (15 oz) black beans, drained and rinsed
Onion: 1 small onion, finely chopped
Garlic: 2 cloves, minced
Breadcrumbs: 1/2 cup (use gluten-free if needed)
Ground Flaxseed: 1 tablespoon (optional for binding)
Water: 2 tablespoons (for mixing with flaxseed)

1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

Olive Oil: 2 tablespoons for cooking
Fresh Cilantro or Parsley: 2 tablespoons, chopped (optional)
Lemon Juice: 1 tablespoon (optional for flavor)

Prepare the Flax Egg (if using):
In a small bowl, combine the ground flaxseed and water. Stir well and let it sit for 5-10 minutes until it thickens.

Mash the Black Beans:
In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Sauté the Onion and Garlic:
In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Mix the Ingredients:
Add the sautéed onions and garlic to the mashed black beans. Stir in the breadcrumbs, spices (cumin, chili powder, smoked paprika, salt, and pepper), fresh herbs, lemon juice, and the flax egg (if using). Mix until well combined. If the mixture is too wet, add a little more breadcrumbs.

Form the Patties:
Divide the mixture into 4 equal portions and shape them into patties. If the mixture is too sticky, you can wet your hands slightly to make shaping easier.

Cook the Patties:
In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the patties and cook for 4-5 minutes on each side until they are browned and crispy on the outside and heated through.

Assemble the Burgers:
Serve the black bean patties on your favorite buns with your choice of toppings. Popular options include lettuce, tomato, avocado, red onion, pickles, and vegan mayonnaise or aioli.

Serving Suggestions:

Black Bean Burgers are versatile and can be served with a side of sweet potato fries, a fresh green salad, or coleslaw. These burgers are perfect for a casual weeknight dinner or a weekend barbecue. Enjoy the hearty and flavorful taste of these plant-based patties that are sure to satisfy any burger craving.
