Veg Crispy Sesame Tempeh Bowl

Ingredients:

8 oz tempeh, sliced into 1/2 inch pieces
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon maple syrup or honey
1 garlic clove, minced
1 teaspoon grated fresh ginger
1/4 cup sesame seeds

For the Bowl:

1 cup cooked rice or quinoa
1 cup broccoli florets, steamed
1 carrot, julienned
1/2 red bell pepper, thinly sliced
1/2 cucumber, sliced
2 tablespoons chopped scallions
Sesame seeds and fresh cilantro for garnish

Instructions:

1/4 cup tahini
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon maple syrup or honey
1 teaspoon sesame oil
Water to thin, if necessary

Instructions:

1. Marinate the Tempeh:

In a shallow dish, whisk together the soy sauce, sesame oil, rice vinegar, maple syrup, garlic, and ginger.
Add the tempeh slices and toss to coat evenly. Let marinate for at least 30 minutes, or up to an hour for more flavor.

2. Prepare the Tempeh:

Remove tempeh from marinade and coat each piece with sesame seeds, pressing gently to adhere.
Heat a non-stick skillet over medium heat and add a little sesame oil. Place tempeh slices in the skillet and cook until each side is golden and crispy, about 3-4 minutes per side.

3. Make the Sesame Sauce:

In a small bowl, whisk together tahini, soy sauce, rice vinegar, maple syrup, and sesame oil until smooth. Add water if the sauce is too thick.

4. Assemble the Bowl:

In serving bowls, start with a base of rice or quinoa.
Arrange the steamed broccoli, julienned carrot, sliced bell pepper, and cucumber around the bowl.
Top with crispy sesame tempeh.
Drizzle with sesame sauce and garnish with chopped scallions, extra sesame seeds, and fresh cilantro.
