Veg Fresh Corn Salsa

Fresh Corn Salsa is a vibrant and flavorful condiment that's perfect for summer barbecues, picnics, or as a refreshing topping for tacos, salads, or grilled meats. This salsa combines the sweetness of fresh corn with the tanginess of lime and the spiciness of jalapeño, creating a delicious and versatile dish.

Veg Fresh Corn Salsa


Corn: 2 cups fresh corn kernels (from about 3-4 ears of corn)
Tomato: 1 large tomato, diced
Red Bell Pepper: 1, diced
Red Onion: 1/2 cup, finely chopped
Jalapeño: 1, seeded and finely chopped
Cilantro: 1/4 cup, chopped
Lime Juice: Juice of 2 limes
Olive Oil: 2 tablespoons
Salt and Pepper: To taste


Prepare the Corn:
If using fresh corn, remove the husks and silk. Stand each ear of corn on its end and use a sharp knife to cut down along the cob, removing the kernels. Alternatively, you can use frozen corn (thawed) or canned corn (drained).

Combine the Ingredients:
In a large bowl, combine the corn kernels, diced tomato, red bell pepper, red onion, and jalapeño.

Add the Dressing:
Drizzle the olive oil and lime juice over the vegetable mixture. Add the chopped cilantro, and season with salt and pepper to taste.

Mix Well:
Stir everything together until all the ingredients are well combined and evenly coated with the dressing.

Cover the bowl and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together.

Serve the Fresh Corn Salsa chilled or at room temperature. It pairs perfectly with tortilla chips, as a topping for tacos or grilled meats, or as a fresh side dish.
