Veg Indian Creamy Coconut Lentil Curry

Ingredients:

Lentils: 1 cup red or yellow lentils, rinsed
Coconut Milk: 1 can (14 oz) of full-fat coconut milk for creaminess
Tomatoes: 2 medium tomatoes, diced, or 1 can (14 oz) of diced tomatoes
Onion: 1 large onion, finely chopped
Garlic: 3 cloves, minced
Ginger: 1-inch piece, minced
Spinach: 2 cups fresh spinach leaves
Vegetable Broth or Water: 2 cups
Spices:

1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric powder
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper (optional, for heat)
1 teaspoon garam masala
Salt and pepper to taste

Lemon Juice: Juice of 1 lemon
Fresh Cilantro: Chopped, for garnish
Olive Oil or Coconut Oil: 2 tablespoons for sautéing

Instructions:

Sauté the Aromatics:
Heat the oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
Add the minced garlic and ginger, and sauté for another minute until fragrant.

Add the Spices:
Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices and enhance their flavors.

Cook the Lentils:
Add the rinsed lentils, diced tomatoes, and vegetable broth or water to the pot. Bring to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the lentils are tender and have absorbed most of the liquid.
