Ingredients:

• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1 red bell pepper, diced
• 1/2 red onion, finely chopped
• 1/4 cup fresh parsley, chopped
• 1/4 cup fresh mint, chopped
• 1 can (15 oz) chickpeas, drained and rinsed
• 1/4 cup crumbled vegan feta cheese (optional)
For the Dressing:
• 3 tablespoons olive oil
• 2 tablespoons lemon juice
• 1 tablespoon red wine vinegar
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 clove garlic, minced
• Salt and pepper to taste
For the Tacos:
• 8 small flour or corn tortillas (use gluten-free if needed)
• 1 avocado, sliced
• 1/4 cup tahini sauce or hummus
• Fresh parsley or mint leaves for garnish

Instructions:

1. Prepare the Salad:
◦ In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, fresh parsley, fresh mint, and chickpeas.
◦ If using, add the crumbled vegan feta cheese.
2. Prepare the Dressing:
◦ In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, ground cumin, ground coriander, minced garlic, salt, and pepper.
3. Dress the Salad:
◦ Pour the dressing over the salad and toss to combine. Adjust seasoning with more salt and pepper if needed.
