Brown Rice: 1 cup brown rice, cooked according to package instructions

Spinach: 2 cups fresh spinach
Carrots: 1 large carrot, julienned
Edamame: 1 cup shelled and cooked edamame
Green Onions: 2 green onions, thinly sliced for garnish
Sesame Seeds: 1 tablespoon for garnish

For the Miso Ginger Dressing:

White Miso Paste: 2 tablespoons
Rice Vinegar: 2 tablespoons
Sesame Oil: 1 tablespoon
Fresh Ginger: 1 tablespoon, grated
Maple Syrup or Honey: 1 tablespoon for sweetness
Garlic: 1 clove, minced
Water: 1-2 tablespoons to thin the dressing


Prepare the Brown Rice:
Cook the brown rice according to package instructions until fluffy and tender. Set aside to cool slightly.

Cook the Mushrooms:
In a large skillet over medium heat, add a splash of sesame oil. Add the sliced mushrooms and sauté until they are tender and have released their moisture, about 5-7 minutes.

Make the Miso Ginger Dressing:
In a small bowl, whisk together miso paste, rice vinegar, sesame oil, grated ginger, maple syrup or honey, minced garlic, and water. Adjust the consistency with more water if needed.

Assemble the Bowl:
In serving bowls, start by placing a base of cooked brown rice.
Arrange the cooked mushrooms, fresh spinach, julienned carrots, and cooked edamame on top of the rice.
