This Mushroom & Vegan Sausage Pasta is a delicious and hearty dish, perfect for a comforting dinner. It combines the earthy flavors of mushrooms with the savory taste of vegan sausage, all tossed in a creamy, dairy-free sauce.

Veg Mushroom & Vegan Sausage Pasta Recipe


Pasta: 12 ounces of your favorite pasta (such as fettuccine, penne, or spaghetti)
Vegan Sausage: 4 vegan sausages, sliced
Mushrooms: 2 cups of mixed mushrooms (such as cremini, shiitake, and button), sliced
Onion: 1 large onion, finely chopped
Garlic: 3 cloves, minced
Spinach: 2 cups fresh spinach leaves
Olive Oil: 2 tablespoons
Coconut Milk or Cashew Cream: 1 cup for the creamy sauce
Vegetable Broth: 1/2 cup
Nutritional Yeast: 1/4 cup (for a cheesy flavor)
Lemon Juice: Juice of 1 lemon
Salt and Pepper: To taste
Fresh Herbs: Chopped parsley or basil for garnish
Red Pepper Flakes: Optional, for a bit of heat


Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Prepare the Vegan Sausage and Mushrooms:
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced vegan sausages and cook until browned and slightly crispy. Remove from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil. Add the chopped onions and sauté until translucent. Add the minced garlic and cook for another minute until fragrant.

Cook the Mushrooms:
Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-7 minutes.

Make the Creamy Sauce:
Pour in the coconut milk or cashew cream and vegetable broth. Stir in the nutritional yeast and bring to a gentle simmer. Cook for 5-7 minutes until the sauce thickens slightly.

Combine and Season:
Add the cooked vegan sausage back into the skillet, along with the fresh spinach leaves. Stir until the spinach wilts.
Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add some of the reserved pasta water until you reach your desired consistency.
Season with salt, pepper, and lemon juice to taste. If using, add red pepper flakes for a bit of heat.

Divide the pasta among serving plates. Garnish with chopped fresh herbs and additional nutritional yeast if desired.
