Veg Smokey Cauliflower Chimichurri Bowls


For the Smokey Cauliflower:
• 1 large head of cauliflower, cut into florets
• 2 tbsp olive oil
• 1 tsp smoked paprika
• 1/2 tsp ground cumin
• Salt and pepper to taste
For the Chimichurri Sauce:
• 1 cup fresh cilantro, finely chopped
• 1 cup fresh parsley, finely chopped
• 1/4 cup red wine vinegar
• 1/2 cup olive oil
• 3 cloves garlic, minced
• 1 tsp red pepper flakes
• Salt to taste
For the Seasoned Black Beans:
• 2 cups cooked black beans (or 1 can, drained and rinsed)
• 1 tsp olive oil
• 1/2 tsp ground cumin
• 1/2 tsp chili powder
• Salt to taste
For the Mexican Slaw:
• 2 cups shredded cabbage
• 1/2 cup shredded carrots
• 1/4 cup chopped cilantro
• 2 tbsp lime juice
• Salt to taste
• Sliced radishes
• Sliced avocado
• Fresh cilantro
• Pickled onions
Optional Base:
• Cooked rice or quinoa


1. Prepare the Smokey Cauliflower:
◦ Preheat your oven to 425°F (220°C).
◦ In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, ground cumin, salt, and pepper.
◦ Spread the cauliflower on a baking sheet and roast for 25-30 minutes, until tender and slightly charred.
2. Make the Chimichurri Sauce:
◦ In a medium bowl, combine the chopped cilantro, parsley, red wine vinegar, olive oil, minced garlic, red pepper flakes, and salt. Mix well and set aside.
3. Prepare the Seasoned Black Beans:
◦ In a skillet over medium heat, heat the olive oil.
◦ Add the black beans, ground cumin, chili powder, and salt. Cook for 5-7 minutes, stirring occasionally, until heated through and fragrant.
4. Make the Mexican Slaw:
◦ In a large bowl, combine shredded cabbage, shredded carrots, chopped cilantro, lime juice, and salt. Toss well to combine.
5. Assemble the Bowls:
◦ If using, add a base layer of cooked rice or quinoa to each bowl.
◦ Add a generous portion of seasoned black beans.
◦ Top with roasted smokey cauliflower, Mexican slaw, sliced radishes, avocado slices, fresh cilantro, and pickled onions.
◦ Drizzle with chimichurri sauce.
