Veg Sweet Potato & Lentil Dal

Sweet Potato & Lentil Dal is a hearty, nutritious, and comforting dish that combines sweet potatoes with lentils in a fragrant, spiced Indian-style stew. This vegan recipe is perfect for a warming meal on chilly days.

Veg Sweet Potato & Lentil Dal

Ingredients:

Sweet Potatoes: 2 large sweet potatoes, peeled and cubed
Lentils: 1 cup red lentils, rinsed
Onion: 1 large onion, finely chopped
Garlic: 3 cloves garlic, minced
Ginger: 1 inch of ginger, minced
Tomatoes: 2 medium tomatoes, diced, or 1 can (14 oz) diced tomatoes
Coconut Milk: 1 can (14 oz) coconut milk
Vegetable Broth: 3 cups vegetable broth
Turmeric: 1 teaspoon turmeric powder
Cumin: 1 teaspoon cumin seeds or ground cumin
Mustard Seeds: 1 teaspoon mustard seeds (optional)
Curry Powder: 1 tablespoon curry powder
Garam Masala: 1 teaspoon garam masala
Spinach: 2 cups fresh spinach leaves (optional)
Cilantro: For garnish
Lemon: Juice of 1 lemon
Salt and Pepper: To taste
Oil: For cooking

Instructions:

Prepare the Ingredients:
Heat a large pot over medium heat. Add a splash of oil, then mustard seeds (if using). Once they start to pop, add the cumin seeds, onion, garlic, and ginger. Sauté until the onions become translucent.

Cook the Sweet Potatoes:
Add the cubed sweet potatoes to the pot and stir for a few minutes. Add turmeric, curry powder, and a pinch of salt and pepper. Cook for about 5 minutes until the spices are fragrant.

Add Lentils and Liquids:
Stir in the red lentils and diced tomatoes. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer, cover, and let it cook for about 20 minutes, or until the lentils and sweet potatoes are tender.

Add Coconut Milk and Final Spices:
Pour in the coconut milk and add garam masala. Stir well and continue to simmer for another 10 minutes. If using, add the spinach in the last few minutes just until wilted.

Finish the Dish:
Remove from heat. Stir in lemon juice and adjust seasoning with salt and pepper as needed.

Serve:
Ladle the dal into bowls and garnish with chopped cilantro. Serve hot, ideally with a side of naan bread or rice for a complete meal.
