Veg Tofu Scramble Supreme

Ingredients:

Tofu: 1 block (14 oz) firm or extra-firm tofu, drained and crumbled
Olive Oil: 1 tablespoon
Onion: 1 small onion, finely chopped
Garlic: 2 cloves, minced
Bell Pepper: 1 small bell pepper, diced (any color)
Turmeric: 1/2 teaspoon (for color and flavor)
Nutritional Yeast: 2 tablespoons (optional, for a cheesy flavor)
Salt and Pepper: To taste
Fresh Herbs: Chopped parsley or chives for garnish

Optional Add-ins:

Spinach: 1 cup fresh spinach leaves, roughly chopped
Mushrooms: 1 cup sliced mushrooms
Tomatoes: 1 medium tomato, diced

Instructions:

Prepare the Tofu:
Drain the tofu and pat it dry with paper towels. Crumble the tofu into small pieces using your hands or a fork, mimicking the texture of scrambled eggs.

Cook the Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and diced bell pepper (and any optional vegetables like mushrooms or tomatoes) and sauté for another 2-3 minutes until the vegetables are tender.

Add the Tofu:
Add the crumbled tofu to the skillet with the vegetables. Stir well to combine.
Sprinkle the turmeric over the tofu mixture and stir until the tofu is evenly coated and turns a vibrant yellow color.
Add the nutritional yeast, if using, and season with salt and pepper to taste.

Cook the Scramble:
Continue to cook the tofu scramble, stirring occasionally, for about 5-7 minutes, until the tofu is heated through and slightly browned.
If using spinach, add it in the last 2 minutes of cooking and stir until wilted.

Serve:
Transfer the tofu scramble to plates and garnish with fresh herbs like chopped parsley or chives.
