Veg Vegetable Fried Rice

Ingredients:

• 3 cups cooked and cooled jasmine rice (preferably day-old)
• 2 tablespoons vegetable oil
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1-inch piece of ginger, minced
• 1 cup mixed vegetables (such as peas, carrots, and corn)
• 1 red bell pepper, diced
• 1 cup broccoli florets, chopped
• 1 cup mushrooms, sliced
• 2 tablespoons soy sauce or tamari (for gluten-free)
• 1 tablespoon hoisin sauce
• 1 teaspoon sesame oil
• 2 green onions, sliced
• 1/4 cup fresh cilantro, chopped (optional)
• Salt and pepper to taste
For Garnish:
• Sliced green onions
• Sesame seeds
• Lime wedges (optional)

Instructions:

1. Prepare the Ingredients:
◦ Make sure all the vegetables are chopped and ready to go before you start cooking, as stir-frying happens quickly.
2. Cook the Vegetables:
◦ In a large skillet or wok, heat the vegetable oil over medium-high heat.
◦ Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
◦ Add the minced garlic and ginger, and cook for another minute until fragrant.
3. Stir-Fry the Vegetables:
◦ Add the mixed vegetables, red bell pepper, broccoli, and mushrooms to the skillet.
◦ Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
4. Add the Rice and Sauces:
◦ Add the cooked and cooled jasmine rice to the skillet, breaking up any clumps with a spatula.
◦ Pour in the soy sauce, hoisin sauce, and sesame oil.
◦ Stir well to combine all the ingredients, ensuring the rice is evenly coated with the sauce.
5. Finish the Dish:
◦ Add the sliced green onions and chopped cilantro (if using) to the skillet.
◦ Stir to combine and cook for another 2 minutes until everything is heated through.
◦ Season with salt and pepper to taste.
6. Serve:
◦ Transfer the vegetable fried rice to serving plates.
◦ Garnish with additional sliced green onions, sesame seeds, and lime wedges if desired.
