Veg Za'atar Roasted Cauliflower Steaks with Green Tahini Sauce


• 1 large head of cauliflower
• 3 tbsp olive oil
• 2 tbsp za'atar seasoning
• Salt and pepper to taste
For the Green Tahini Sauce:
• 1/2 cup tahini
• 1/4 cup fresh parsley, chopped
• 1/4 cup fresh cilantro, chopped
• 1/4 cup fresh lemon juice
• 1 clove garlic, minced
• 1/4 cup water (more if needed for desired consistency)
• Salt to taste
For Garnish:
• Fresh parsley, chopped
• Pomegranate seeds (optional)


1. Prepare the Cauliflower Steaks:
◦ Preheat your oven to 425°F (220°C).
◦ Remove the leaves from the cauliflower and trim the stem, but leave the core intact.
