Veg Za'atar Roasted Eggplant

Za'atar Roasted Eggplant is a flavorful and aromatic dish that showcases the robust, earthy qualities of eggplant paired with the distinctive Middle Eastern spice blend known as za'atar. Za'atar typically includes a mixture of dried herbs like thyme and oregano, sumac, and toasted sesame seeds, which lend a tangy, nutty flavor that complements the natural mildness of the eggplant beautifully.

Veg Za'atar Roasted Eggplant

Ingredients:

• 2 large eggplants
• 3 tbsp olive oil
• 2 tbsp za'atar seasoning
• 1 tsp salt
• 1/2 tsp black pepper
• 2 tbsp tahini
• 1 tbsp lemon juice
• 1 clove garlic, minced
• Fresh parsley, chopped (for garnish)
• Pomegranate seeds (optional, for garnish)

Instructions:

1. Prepare the Eggplant:
◦ Preheat your oven to 425°F (220°C).
◦ Slice the eggplants into 1/2-inch thick rounds.
◦ Place the eggplant slices on a baking sheet lined with parchment paper.
2. Season the Eggplant:
◦ In a small bowl, mix the olive oil, za'atar seasoning, salt, and black pepper.
◦ Brush the mixture evenly over both sides of the eggplant slices.
3. Roast the Eggplant:
◦ Roast the eggplant in the preheated oven for 25-30 minutes, flipping halfway through, until the eggplant is tender and golden brown.
4. Prepare the Tahini Sauce:
◦ In a small bowl, whisk together the tahini, lemon juice, minced garlic, and a little water to achieve a smooth, pourable consistency.
5. Assemble the Dish:
◦ Arrange the roasted eggplant slices on a serving platter.
◦ Drizzle the tahini sauce over the eggplant.
◦ Garnish with chopped fresh parsley and, if using, pomegranate seeds.
6. Serve:
◦ Serve the Za'atar Roasted Eggplant warm or at room temperature.
