Vegan Alfredo is a delightful plant-based version of the classic creamy pasta sauce. Traditionally made with heavy cream, butter, and parmesan cheese, the vegan adaptation achieves a similar rich and creamy texture through alternative, dairy-free ingredients. It's a wonderfully indulgent yet healthier option for those following a vegan diet or anyone looking to reduce dairy intake without sacrificing flavor.

Vegan Alfredo

Ingredients:

Cashews: Soaked raw cashews are the base of the sauce, providing a creamy texture and subtle nutty flavor when blended.
Nutritional Yeast: Adds a cheesy flavor without using dairy and is rich in B-vitamins.
Garlic: Fresh or roasted garlic adds depth and pungency to the sauce.
Lemon Juice: Brightens the sauce and adds a light tangy note.
Plant-based Milk: Unsweetened almond, soy, or oat milk are used to adjust the consistency of the sauce.
Onion: Adds sweetness and flavor depth, often sautéed before blending.
Dijon Mustard: A small amount can enhance the richness of the sauce.
Salt and Pepper: For seasoning and to enhance all the flavors.
Optional Add-ins: Spices like nutmeg or white pepper, or herbs like parsley, can be added for extra flavor.

Instructions:

Soak the Cashews:
Soak the cashews in hot water for at least 30 minutes or cold water for several hours or overnight to soften. This step is crucial for achieving a smooth sauce.

Cook the Garlic and Onion:
Sauté the chopped onion and garlic in a little olive oil until translucent and slightly golden, enhancing their flavors.

Blend the Sauce:
Drain and rinse the soaked cashews. Combine them in a blender with the sautéed onion and garlic, nutritional yeast, lemon juice, plant-based milk, Dijon mustard, and any additional seasonings.
Blend until completely smooth. If the sauce is too thick, add more plant-based milk until the desired consistency is reached.

Heat and Serve:
Pour the sauce into a pan and heat gently until warm. Be careful not to boil, as it may affect the texture.
Adjust seasoning with salt and pepper.

Combine with Pasta:
Toss the warm Alfredo sauce with cooked pasta, preferably fettuccine or linguine, ensuring it’s well coated.
Serve immediately, garnished with fresh herbs or vegan parmesan if desired.

Serving Suggestions:

Vegan Alfredo is versatile and can be served over any pasta or used as a creamy base in other dishes like casseroles or poured over steamed vegetables.
