Vegan Burritos

Ingredients:

For the Burrito Filling:

Black Beans: 1 can (15 oz), drained and rinsed
Brown Rice: 1 cup, cooked
Bell Pepper: 1 large, diced
Onion: 1 medium, diced
Corn: 1 cup, cooked (fresh or frozen)
Garlic: 2 cloves, minced
Olive Oil: 2 tablespoons
Cumin: 1 teaspoon
Chili Powder: 1 teaspoon
Paprika: 1 teaspoon
Salt and Pepper: To taste
Lime Juice: Juice of 1 lime
Fresh Cilantro: Chopped, for garnish

For the Avocado Salsa:

Avocado: 1 large, diced
Tomato: 1 medium, diced
Red Onion: 1/4 cup, finely chopped
Lime Juice: Juice of 1 lime
Salt and Pepper: To taste
Fresh Cilantro: Chopped, for garnish

For Assembly:

Large Flour Tortillas: 4-6 tortillas
Lettuce: Shredded, for topping
Salsa: Your favorite salsa, for topping
Vegan Sour Cream: Optional, for topping

Instructions:

Prepare the Burrito Filling:
Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Stir in the black beans, cooked corn, cumin, chili powder, paprika, salt, and pepper. Cook for another 5-7 minutes, allowing the flavors to meld together.
Add the cooked brown rice and lime juice, stirring well to combine. Cook until everything is heated through. Garnish with fresh cilantro.

Prepare the Avocado Salsa:
In a medium bowl, combine diced avocado, tomato, red onion, lime juice, salt, pepper, and fresh cilantro. Mix gently to combine.

Assemble the Burritos:
Warm the flour tortillas in a dry skillet or microwave until pliable.
Lay each tortilla flat and spoon a generous amount of the burrito filling into the center.
Top with shredded lettuce, avocado salsa, salsa, and vegan sour cream if using.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito.

Serve:
Serve the burritos warm, either as is or with additional toppings like more salsa, avocado slices, or lime wedges on the side.
