Vegan Pesto Pasta

Ingredients:

Instructions:

Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Make the Pesto:
In a food processor or blender, combine the fresh basil leaves, nuts, garlic, nutritional yeast, and lemon juice. Pulse until the ingredients are finely chopped.
With the food processor running, slowly drizzle in the olive oil until the pesto reaches a creamy consistency. If the pesto is too thick, you can add a bit of the reserved pasta water to thin it out.
Season with salt and pepper to taste.

Combine Pasta and Pesto:
In a large mixing bowl, toss the cooked pasta with the prepared pesto sauce until evenly coated. If using, add cherry tomatoes, spinach, or other vegetables at this stage.

Serve:
Divide the pesto pasta among serving plates. Garnish with additional fresh basil leaves, a sprinkle of nutritional yeast or vegan parmesan, and a drizzle of olive oil if desired.
