Vegan Pesto Pasta

Pasta: Your choice of pasta, such as spaghetti, fettuccine, or penne. Whole wheat or gluten-free options can also be used.
Basil: Fresh basil leaves are the star of the pesto sauce, providing a fragrant and herbal flavor.
Nuts: Pine nuts are traditional, but you can also use walnuts, almonds, or cashews for a creamy texture and nutty taste.
Garlic: Fresh garlic cloves add a pungent kick to the pesto.
Nutritional Yeast: Adds a cheesy flavor to the pesto without dairy.
Lemon Juice: Freshly squeezed lemon juice brightens the flavor of the pesto.
Olive Oil: Extra-virgin olive oil creates a smooth and rich pesto sauce.
Salt and Pepper: To taste, for seasoning.
Optional Add-ins: Cherry tomatoes, spinach, or vegan parmesan cheese for added flavor and nutrition.

Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Make the Pesto:
In a food processor or blender, combine the fresh basil leaves, nuts, garlic, nutritional yeast, and lemon juice. Pulse until the ingredients are finely chopped.
With the food processor running, slowly drizzle in the olive oil until the pesto reaches a creamy consistency. If the pesto is too thick, you can add a bit of the reserved pasta water to thin it out.
Season with salt and pepper to taste.

Combine Pasta and Pesto:
In a large mixing bowl, toss the cooked pasta with the prepared pesto sauce until evenly coated. If using, add cherry tomatoes, spinach, or other vegetables at this stage.

Divide the pesto pasta among serving plates. Garnish with additional fresh basil leaves, a sprinkle of nutritional yeast or vegan parmesan, and a drizzle of olive oil if desired.

Serving Suggestions:

Vegan Pesto Pasta is best enjoyed fresh, but it can also be served cold as a pasta salad. Pair it with a simple green salad or garlic bread for a complete meal. The vibrant green color and rich, herbal flavors make this dish as visually appealing as it is delicious. Whether for a weeknight dinner or a special occasion, Vegan Pesto Pasta is sure to be a hit with everyone.
