Ingredients:

Portobello Mushrooms: Large portobello mushroom caps, cleaned and sliced into thick strips.
Marinade: A mixture of olive oil, soy sauce or tamari, lime juice, garlic, smoked paprika, cumin, and chili powder to infuse the mushrooms with deep flavor.
Tortillas: Small corn or flour tortillas, warmed or lightly toasted.
Toppings:

Avocado: Sliced or mashed for creaminess.
Red Cabbage: Thinly sliced for a crunchy texture and vibrant color.
Pico de Gallo: A fresh salsa made with diced tomatoes, onions, cilantro, jalapeño, and lime juice.
Cilantro: Fresh leaves for garnish.
Lime Wedges: For squeezing over the top.

Instructions:

Marinate the Mushrooms:
In a bowl, whisk together the olive oil, soy sauce or tamari, lime juice, minced garlic, smoked paprika, cumin, and chili powder.
Add the sliced portobello mushrooms to the marinade, tossing to coat evenly. Let sit for at least 15-20 minutes to absorb the flavors.

Cook the Mushrooms:
Heat a large skillet over medium-high heat. Add the marinated mushroom slices and cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and slightly caramelized.

Prepare the Toppings:
While the mushrooms are cooking, prepare the toppings. Slice the avocado, shred the red cabbage, and mix together the ingredients for the pico de gallo.

Assemble the Tacos:
Warm the tortillas in a dry skillet or microwave.
Place a generous portion of the cooked mushrooms on each tortilla.
Top with sliced avocado, shredded red cabbage, pico de gallo, and fresh cilantro.
