Vegan Tlayudas

Vegan Tlayudas are a plant-based take on a traditional Oaxacan street food dish often referred to as Mexican pizza. The base of the dish is a large, crispy corn tortilla, which is toasted on a griddle until it reaches a delightful crunch. This classic dish is then adapted to a vegan-friendly version by using a variety of flavorful, plant-based toppings.

Vegan Tlayudas

Ingredients:

For the Tlayuda Base:
• 4 large flour tortillas (preferably extra-large and thin)
• 2 tablespoons vegetable oil
For the Refried Black Beans:
• 1 can (15 oz) black beans, drained and rinsed
• 1 tablespoon olive oil
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• Salt and pepper to taste
For the Toppings:
• 1 cup vegan cheese, shredded (optional)
• 1 avocado, sliced
• 1 cup cherry tomatoes, halved
• 1 cup shredded lettuce or cabbage
• 1/2 cup radishes, thinly sliced
• 1/4 cup fresh cilantro, chopped
• 1/4 cup pickled jalapeños
• 1 lime, cut into wedges
For the Vegan Crema:
• 1/2 cup unsweetened coconut yogurt or vegan sour cream
• 1 tablespoon lime juice
• 1 teaspoon hot sauce (optional)
• Salt to taste

1. Prepare the Refried Black Beans:
◦ In a skillet, heat the olive oil over medium heat.
◦ Add the chopped onion and sauté until translucent, about 5 minutes.
◦ Add the minced garlic, ground cumin, and ground coriander. Cook for another 1-2 minutes until fragrant.
◦ Add the black beans and a splash of water. Cook for about 5-7 minutes, mashing the beans with the back of a spoon until they form a thick paste. Season with salt and pepper to taste. Set aside.
2. Prepare the Tlayuda Base:
◦ Preheat your oven to 375°F (190°C).
◦ Brush both sides of the flour tortillas with vegetable oil.
◦ Place the tortillas directly on the oven rack or on a baking sheet and bake for 5-7 minutes, flipping halfway through, until they are crispy and golden brown.
3. Assemble the Tlayudas:
◦ Spread a layer of the refried black beans on each crispy tortilla.
◦ Sprinkle with vegan cheese if using.
◦ Return the tortillas to the oven for another 5 minutes, or until the cheese is melted and bubbly.
4. Add the Toppings:
◦ Top the tlayudas with sliced avocado, cherry tomatoes, shredded lettuce or cabbage, radishes, fresh cilantro, and pickled jalapeños.
5. Prepare the Vegan Crema:
◦ In a small bowl, whisk together the coconut yogurt or vegan sour cream, lime juice, hot sauce (if using), and salt.
6. Serve:
◦ Drizzle the vegan crema over the assembled tlayudas.
◦ Serve immediately with lime wedges on the side.
