Vegan Vegetable Lo Mein

Ingredients:

For the Lo Mein:
• 8 oz lo mein noodles or spaghetti (use gluten-free if needed)
• 2 tablespoons vegetable oil
• 1 large onion, thinly sliced
• 2 cloves garlic, minced
• 1 cup carrots, julienned
• 1 red bell pepper, thinly sliced
• 1 cup broccoli florets
• 1 cup snap peas
• 1 cup mushrooms, sliced
• 2 green onions, sliced
• 1/4 cup fresh cilantro, chopped (optional)
• Sesame seeds (for garnish)

Instructions:

1. Prepare the Sauce:
◦ In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, rice vinegar, maple syrup, sriracha (if using), minced garlic, and minced ginger. Set aside.
2. Cook the Noodles:
◦ Bring a large pot of water to a boil and cook the lo mein noodles or spaghetti according to package instructions until al dente. Drain and set aside.
3. Stir-Fry the Vegetables:
◦ In a large skillet or wok, heat the vegetable oil over medium-high heat.
◦ Add the sliced onion and cook for 2-3 minutes until it becomes translucent.
◦ Add the minced garlic and cook for another 1 minute until fragrant.
◦ Add the julienned carrots, sliced red bell pepper, broccoli florets, snap peas, and mushrooms to the skillet.
◦ Stir-fry the vegetables for 5-7 minutes until they are tender but still crisp.
4. Combine and Serve:
◦ Add the cooked noodles to the skillet with the vegetables.
◦ Pour the sauce over the noodles and vegetables, tossing to coat everything evenly.
◦ Cook for an additional 2-3 minutes until everything is heated through and well combined.
◦ Garnish with sliced green onions, chopped fresh cilantro, and sesame seeds.
